    It is kind of chilly today so I made one of my husbands favorite comfort foods which is chicken and dumplings! It was really warm and conforting! My son and I are fighting a cold so it was good for us too!

    Last night I had peanut butter and apples.. lol. It was a small dinner but I was too tired to make anything so I just cut up an apple and dipped it in peanut butter. I'm still full from it.. peanut butter takes ages to digest.

    That sounds delicious and ideal for this time of year. One of the things I love about winter is the comfort food, although it's not good for my waistline! It's very convenient to make stews and casseroles as everything is in one big pot and pretty much cooks itself, and I usually make loads so if feeds us for 2-3 days :)

    I plan on making macaroni tuna casserole tonight! It is actually a pretty healthy casserole since it is made with tuna and not beef.. the only bad thing is probably the cream of mushroom soup otherwise all it is is milk and peas I and macaroni I believe. My cat would probably love it :p

    REALLY exciting! Banquet Microwave dinner! Either Spaghetti or Pork patty....maybe for dessert an orange from our orchard here in our Mobile Home Park in AZ! I cook rarely.....but love to eat out when I can.

    Well, tonight we had oven fried chicken tenders that I breaded with crushed corn flakes (it's part of my eat healthier kick) mashed potatoes that I mashed with skim milk and chicken broth, and sweet peas.

    Tonight I will be making cottage pie , with lots of extra vegetables for a healthy touch and also to bulk out the rather small pack of mince that I have :)

    My son has karate tonight so we're having something fast and easy, soup and grilled cheese sandwiches.

    Hubby likes tomato, I had vegetable beef and my son had potato. I think tomorrow I'm going to attempt to make a healthy version of macaroni and cheese.

    Last night, we went to Pot Belly's. I haven't had a Pot Belly sandwich in ages.. it was absolutely delicious! I had chicken breast with cheddar, tomatoes, lettuce, and Italian seasoning.

    All this is making me so hungry! Hubby is cooking tonight so I am in for a treat. I made my own soup from scratch a little while ago so think I will have to attempt to do it again soon as it was cheap, filling and healthy.

    Making macaroni and cheese with all wheat pasta. You take 3 oz. of cheddar cheese, 3 oz. of Parmesan cheese, 1/2 skim milk, and 2 egg whites mix it all together then fold it in to your cooked macaroni and put it in a baking dish and top with whole wheat bread crumbs. Bake 35 to 40 minutes at 350. This is my healthier version I came up with we'll see how it turns out. LOL

    That sounds delicious as well as healthy. Let us know how it turned out - it's one of my favourite meals and my cats like it too lol

    It turned out very well! My son and grand daughter both liked it and they are VERY picky about their macaroni and cheese.

    Tonight I am making a cheesy, chicken, broccoli, rice casserole. My son hates broccoli so he's not going to be happy. LOL

    I don't know what to have for dinner. i am 7 weeks pregnant and my tastes have really changed! i think perhaps I'll make myself some soup.....
